Mustard is a plant that eagerly cultivated by farmers, due to its mobility across agroclimatic conditions and high yield. seeds have thus become valuable source of many bioactive ingredients, such as polyunsaturated fatty acids antioxidants (carotenoids, phenolic compounds, tocopherols). The increasingly popularity natural ingredients in food creation other industries has made mustard material for creating new products. mustard-infused foods developed here improved properties over the controls. most common improvements relate microbiological safety, longer shelf life, slower lipid oxidation, higher protein content overall better product acceptability. erucic acid seeds, well glucosinolates, mean not been widely used human industry or animal feed. varieties with reduced levels glucosinolates are now available on market. This literature review characterizes present presents already possibilities using health-promoting product.
